Elena's Rojo Amaranth

Yields enormous and vibrant red-flowering seed heads that are quite the showstopper in any garden. Plant stalks can grow over 6 feet tall! This rare cultivar from Guatemala was restored in recent years by the Mayan communities of Baja Verapaz. Was named after an indigenous farmer named Elena who helped save this precious amaranth from the brink of extinction after the amaranth was almost lost during the civil war. The versatile, white-colored seed can be popped like popcorn, used as an ingredient in bread, or ground into flour. (Annual, 90 days from transplant)
