Beaver Valley Purple Jerusalem Artichoke

Tubers softly shaded from brownish tones to reddish purple, with white terminal buds. White flesh. Slightly sweet and tender-crisp when raw, creamy and mild-flavored when steamed.  Introduced by Will Weaver, he found it in the garden of an elderly PA Dutch woman, Sarah Morgan, in the Beaver Valley area near Pine Grove PA; the plant was in the garden in 1920 when the Morgans purchased the farm and was even then considered an heirloom by neighborhood old-timers.
